Sunday brunch is becoming a weekly fav of mine. I recently explored brunch at my local watering hole, The Tripel, and boy was I not disappointed. I am pretty certain that a fried egg topper makes almost any food fantastic! This is why I have fallen in love with "The Cure" burger. Let's not forget the pretzel bun. Also, I felt the need to add some greens in the mix so The Cobb salad was a perfect fill in. The roasted chicken was grilled and seasoned to perfection. Washed it all down with a a pear cava. If you still have room after all of the above, try the sweet potato tots! I kid you not, TOTS! So fun.

Wellness Wednesday: Granola alternative
If you are like me, then you could probably house a pound of granola each morning. The only problem... WAY TOO MUCH SUGAR AND BUTTER! So instead of ditching my beloved tasty oats combination I created a "healthy" version of the toasted breakfast treat. Behold, quinoa and oats granola! Protein packed quinoa mixed with gluten free oats. Instead of using butter or olive oil, I used virgin coconut oil to help it all stick. If you are still craving sweet, simply add a half of a teaspoon of raw honey to top it off. The result, yum.
1 Cup red quinoa
2 Cups of gluten free oats
1/4 cup of cinnamon
1tsp of nutmeg
1/4 of virgin coconut oil
Mix all of the above ingredients together and place in a glass cooking dish
Roast in the oven on 350 degrees for 45 minutes, turning the mixture every 15 minutes
Optional add on's
1 tsp of Acai powder
1tsp of raw honey
1/2 cup of nonfat kefir
1 Cup red quinoa
2 Cups of gluten free oats
1/4 cup of cinnamon
1tsp of nutmeg
1/4 of virgin coconut oil

Wellness Wednesday: Nutritious morning shake
I strongly believe that breakfast should not be ignored. The benefits of fueling with the right type of foods before you start your day, can make a dramatic difference in your everyday life. This is why I love this breakfast shake. Not only is this shake delicious, but it is also quick and easy to make. It has all of the necessary components of a balanced breakfast all in one tasty drink. Protein, vitamins, antioxidants and energy boosters. Enjoy!
Ingredients:
10 oz Water (or coconut water)
2 tbsp of ground flaxseed
1 rounded tbsp of non GMO Lecithin
1 serving of vegan protein powder
1/2 cup of frozen mixed berries
1/2 cup of frozen spinach
1 tsp of Cinnamon
